Taiwanese Aiyu 爱玉 jelly recipe

Got the seed from Taiwan. Aiyu is very simple to make. You just need the seeds, water, sock (used to made coffee) and your hands. Was told to use just tap water because the minerals in the water will activate the pectin released from the seeds.
  • 40g Aiyu seeds
  • 1 litre tap water
Put aiyu seeds in the sock bag, twist the stock and tie it. Put sock into the bowl of water and rubbed it with my hands. You will have soapy feeling...it's normal, continue another 5 minutes and leave it for 1-2 hrs to settle and harden. 
Make honey juice, lime or lemon juice to serve with the aiyu.

Deluxe Chocolate Chip Cookies

200g packed brown sugar
165g gradulated sugar
225g butter (softened)
1 teaspoon vanilla
2 eggs
310g All purpose flour
3/4 teaspoon salt
3/4 teaspoon baking soda
1 cup chopped walnuts/macadamias
cookie sheet

12 ounces semisweet / milk chocolate (coarsely chopped)
OR
12 ounces package semisweet chocolate chips (350g)

Step 1: Beat sugars and butter in large bowl with electric mixer on medium speed about 3 mins or till sugar dissolved.

Step2: Add vanilla, eggs and continue to beat

Step3: Add flour, baking soda and salt.

Step4: Add walnuts and chocolate.

Pre-heat oven 195 degree celcius.
Drop dough (about one full teaspoon) about 2 inch apart on ungreased cookie sheet.
Flattten slightly with spoon.
Bake 11 to 14 mins or till edge of cookies turn light brown.

Remove from oven, cool for 5 mins, remove from cookie sheet.
